Caper and Burrata Crostini
I've always been a bit suspicious of capers, but this recipe combines them with creamy Burrata cheese and sweet shallots to take the edge off their strong saltiness.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings
Ingredients
1 baguette
2 shallots
100g capers
2 tbsp butter
100g burrata cheese (could be replaced with any kind of cream cheese)
Method
Slice your baguettes and lay them out ready for loading with delicious toppings.
Chop the shallots into a fine dice.
Drain the capers.
Melt the butter in a small frying pan.
Sauté the shallots and capers in the butter until they are soft.
Toast the bread.
Dollop a spoonful of the burrata onto each slice of toast.
Pop a teaspoonful of the caper and shallot mixture on top.
Sprinkle with sea-salt and serve.
These make an unusual hors d'oeuvre or a perfect antipasti for an Italian meal.
