Capsicum and Corn Subzee
This is a medium spicy, slightly tangy dish made with capsicum, boiled corn and potato. It goes well with roti.
It is quick and easy and is good for the last-minute meals
Ready to serve

Cooking Time: 10-15 minutes
Makes: 2-3 servings
Ingredients
1 capsicum (green bell pepper), chopped
1/2 onion, sliced
1/2 potato
1/2 cup boiled corn kernels
1 teaspoon oil for cooking
1/2 teaspoon cumin seeds
1 teaspoon curry powder
1/2 teaspoon paprika powder
A pinch of turmeric
Salt to taste
2 teaspoon of vinegar
Method
Cut the potato in strips and then make 1 inch long pieces. Steam them till they are half cooked so they can cook quickly with the other veggies
In a pan heat oil. Add cumin seeds. Once they splutter add the onion and saute till transparent.
Next add the capsicum. Add the salt and other spices. Cover and cook
Add the potato and corn. Mix together.
Now add the vinegar. Combine everything and saute well for 2 minutes. Then cover and cook for 8-10 minutes stirring once in between
Check the seasoning.
Serve with rotis
