Capsicum and Corn Subzee

This is a medium spicy, slightly tangy dish made with capsicum, boiled corn and potato. It goes well with roti.
It is quick and easy and is good for the last-minute meals

Ready to serve


Preparation Time: 5 minutes
Cooking Time: 10-15 minutes
Makes: 2-3 servings

Ingredients
1 capsicum (green bell pepper), chopped
1/2 onion, sliced
1/2 potato
1/2 cup boiled corn kernels
1 teaspoon oil for cooking
1/2 teaspoon cumin seeds
1 teaspoon curry powder
1/2 teaspoon paprika powder
A pinch of turmeric
Salt to taste
2 teaspoon of vinegar

Method
  • Cut the potato in strips and then make 1 inch long pieces. Steam them till they are half cooked so they can cook quickly with the other veggies

  • In a pan heat oil. Add cumin seeds. Once they splutter add the onion and saute till transparent.



  • Next add the capsicum. Add the salt and other spices. Cover and cook

  • Add the potato and corn. Mix together.



  • Now add the vinegar. Combine everything and saute well for 2 minutes. Then cover and cook for 8-10 minutes stirring once in between

  • Check the seasoning.

  • Serve with rotis
