Capsicum and Tomato Soup

This is a great soup that can be eaten hot or cold.



Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 8 servings

Ingredients
2 red capsicums, seeded and cut into chunks
3Tbs olive oil
1 large brown onion, sliced
1Tbs tomato paste
750g tomatoes, chopped
2cups vegetable stock
salt and pepper to season

Method





  • Oil a large baking tray with one spoon of the oil and arrange capsicum pieces skin side up. Brush the skin with another spoon of oil and bake in an oven at 200 degrees until soft.



  • Peel off the skins and cut into finer pieces.

  • In a large saucepan, heat the last spoon of oil and add the onion.



  • Cook until onion is soft and translucent then add the tomato paste. Stir for two minutes and add the chopped tomato and capsicum.



  • Add the stock and cover. Cook until liquid has reduced and tomatoes are soft.



  • Alow to cool slightly, then blend either with a stick blended or in a food processor.



  • Add salt and pepper to taste, mixing the seasonings through.

  • Serve either hot or cold.
