Caramel Slice
This recipe is very easy to make and combines two of my favourite things, chocolate and caramel.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 10-20
Ingredients
For the base
150 g plain flour
110 g raw sugar
40 g of desiccated coconut
125 g butter melted
For the caramel
1 395 g can of condensed milk
80 g of golden syrup
100 g of butter
For the top layer
200 g of milk chocolate melts
1 tablespoon of vegetable oil
Method
Preheat oven to 180 degrees Celsius or 160 degrees Celsius fan forced.
In a large bowl add the butter, flour, sugar and coconut in a bowl and mix well to combine.
Take an 18cm by 28cm lamington pan (or any rectangle pan you have) and line with baking paper.
Pour the base mixture into the pan and spread to cover the pan and press down.
Press base firmly before baking
Bake for 20 minutes.
While the base is baking, add the condensed milk, golden syrup and butter in a pan and stir over low heat until smooth.
Stir over low heat until smooth
When base is cooked pour the caramel over the base and bake for 20-25 minutes until golden. Allow to cool.
Caramel has been cooked, allow to cool
In a microwave proof bowl add the chocolate and microwave for 1 minute and stir. Continue to microwave at 30 second intervals until chocolate is melted.
Add oil to the chocolate and mix until combined.
Pour the chocolate over the caramel and leave to set.
Chocolate has set
When set, cut the slice in half lengthways and then cut each half into five pieces. Each slice can then be cut in half again if you would like to serve more people. Serve and enjoy.
