When it starts to thicken turn the heat off and put sauce aside still in the pan.

coconut palm sugar then mix well.

Cooking bananas in a fry pan

Turn bananas cooking on each side for 1-2 minutes.
When bananas are almost cooked turn the heat back on for the sauce and warm for about 30 seconds.
Take out bananas when cooked through and place on your serving plate.
Drizzle with sauce and serve as is or with a scoop of ice cream would be nice too.

Notes Sauce can be served warm or cold. Place remaining sauce in the fridge and take it out and use it as required. This should keep in the fridge for a few days.
If sliced evenly through the middle you can serve the bananas in two halves. If they are too thin they will break up when cooked. These looked great but the sauce thickened too much this time and it didn't spread around the plate the way I wanted it too.
