Caramelised Onion Gorgonzola Tartlets
These little tartlets make the perfect finger food for special occasions/parties/events/ladies luncheons/high teas etc. They are visually impressive and really tasty. You could also make this recipe into one large tart.
Premade Canape cups
For this particular recipe, I used pre-made "canape cups" available from your local delicatessen or well stocked super market. Alternatively, you could make your own short crust pastry or use some short crust pastry which is readily available in any frozen food section of the supermarket.

Makes: 20 tartlets
Ingredients
20 pre-made "canape cups"
5 large white onions
1 Tablespoon Extra Virgin Olive Oil
2 - 3 tablespoons Balsamic Vinegar
2 - 3 tablespoons white wine
salt and freshly cracked pepper (to taste)
100g Gorgonzola cheese
1 tablespoon chopped parsley (used for a garnish)
Add the caramelised onion
Method
Finely chop your white onions, then heat 1 tablespoon of Extra Virgin Olive Oil. Fry them together until the onions start to brown.
Add 2 tablespoons of Balsamic Vinegar and allow the onions to "sweat" and the flavours to inter-mingle.
When the mixture begins to catch on the bottom of the pan, add 2 tablespoons of white wine. Continue gently frying the mixture, adding more balsamic vinegar and white wine as required.
After a good hour, the onion mixture should resemble jam in its consistency and be very dark brown in colour. At this point, spoon the onion mixture into the canape cups in even amounts.
Top with a dollop of Gorgonzola cheese
Top each canape cup with a small dollop of Gorgonzola cheese. Place in a moderate oven for 5 - 10 minutes or until the cheese is just melted.
Ready to serve with parsley garnish
Serve with a garnish of finely chopped parsley.
