Caramelised Pear And Sultana Crumble
Two simple tricks transform this into a sensational crumble. The pear is caramelised to intensify the flavour. The sultanas become plump flavour bombs and combine with the pear to make a delicious filling. Desiccated coconut, cinnamon and brown sugar make an extra tasty crumble.

Cooking Time: 55 minutes
Serves 1 large or 4 small crumbles
Ingredients
4 large pears, peeled, cored and diced
1 cup sultanas
3/4 cup water
2 tbsp butter (or nuttlelex if lactose free)
3 tbsp raw sugar
1 lemon, juiced and finely zested
4 tsp cinnamon
1/2 cup brown sugar
1 cup rolled oats
1/2 cup flour
1/4 cup desiccated coconut
75g butter (or nuttlelex if lactose free)
Method
Preheat the oven to 180 degrees.
Put the pear, 1 tbsp lemon zest, 1 tbsp juice, 2 tbsp raw sugar and 2 tsp cinnamon into a bowl. Stir to combine, stand for 5 minutes.
Melt the margarine in a saucepan, add the pear mixture and cook on medium heat for 2-3 minutes, until the pear is caramelised. Transfer to a 23 cm pie dish.
Add water, sultanas, 1 tsp cinnamon and 1 tbsp raw sugar to the saucepan and boil the sultanas for 5-6 minutes until the water has reduced by a half. Transfer into a pie dish and stir with the pear to combine.

Place the rolled oats, desiccated coconut, flour, butter, 1 tsp cinnamon and brown sugar into a bowl. Use your fingers to combine the dry ingredients until breadcrumb like consistency.
Sprinkle the crumble over the pear and sultana mixture.

Bake for 45-50 minutes, until the crumble is golden brown and the pear is cooked through.
Serve with cream, custard or icecream.
