Caribbean Baked Bream

Bream is what I consider a fish of the Caribbean because my Jamaican grandparents use this type of fish more than the standard, cod, tuna, or salmon. It has a meatiness similar to monkfish, but is much less expensive. It has a mild flavour, which makes it the perfect receptacle for light or heavy seasoning. Coupled with traditional Caribbean flavours, baked bream is a delicious alternative to your regular fish selection.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

1 Onion
1 Bream fillet
1 Carrot
Half tsp Black pepper
Sprig of Thyme
Half tsp Tumeric
Half tsp chilli powder
Half tsp Nutmeg
3 Tblsp Olive oil
Handful of spinach (optional)

Slice the vegetables into equal sizes.

Place the vegetables in a pyrex dish and drizzle with olive oil.

Wash the fillet and slice along the belly. A small 'pocket' should be formed, place the seasoning inside.

Try and keep all of the seasoning inside the fish for an intense flavour.

Place the fillet on top of the vegetables and season with black pepper.

Drizzle with a tblsp of more oil, cover with a lid and bake for 35 minutes at 170 degrees/gas mark 3.

Remove the lid and see if your fish is cooked - the skin should be slightly wrinkled will seem almost golden.

Halve the fish and serve alongside half of the vegetables.

For an even healthier dish add some fresh spinach, too.

Increase quantities for group size, with one fillet per person.
