Caribbean Corn on the Cob

Simple corn on the cod gets a Caribbean twist with the following flavours. You won't be able to eat it another way again.

Preparation Time: 2 minutes
Cooking Time: 40 minutes
Makes: 2 servings

Ingredients
2 Fresh Sweetcorns
3 Thyme sprigs
1 Green chilli
1 Scotch bonnet pepper
Knob of butter

Required ingredients


Method
Remove the 'green jackets' on the sweetcorn and place in a saucepan of boiling water for 30 minutes.

Drain the sweetcorn in a colander and plate up.



Chop the chilli into three small chunks and then finely slice.



Place the chilli in a frying pan with the thyme and a glug of olive oil over a medium heat for 2 minutes.



Remove from the frying pan and add to the plate of sweetcorn along with the butter. Roll the sweetcorn in the butter and chilli pieces.



Vegetarian-friendly, this is a great party-food side all will enjoy.
