Carrot and Apple Muffins
These easy muffins are a delicious, healthy snack to make for breakfast or brunch. They are also fantastic for kids lunchboxes or a tasty afternoon treat.

Serves: makes 6
Ingredients
1/2 cup grated carrot
1/2 cup grated apple
1 cup plain flour
1/3 cup sugar
2 tablespoons sultanas
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon mixed spice
75 grams melted butter
90 ml milk
1 egg
Method
Preheat oven to 180 degrees.
Grease and line a 6 hole muffin pan.
Sift the flour, baking powder and spices into a large mixing bowl. Put in the sugar and stir to combine.
In a separate bowl or jug, whisk the egg, butter and milk.
Make a well in the centre of the flour and pour in the wet ingredients. Mix well to combine.
Fold in the carrot, apple and sultanas until incorporated.
Spoon the mixture evenly into the 6 muffin holes.
Bake in the preheated oven for 20 minutes.
Allow them to stand for 5 minutes, then turn onto a wire rack to cool.
Notes
Recipe can be doubled to make 12.
Muffins are suitable to freeze for up to 4 weeks.
