Ingredients
4 Carrots
Flesh from 1/2 Coconut
½ Teaspoon Chilli
1 Teaspoon Fennel
1 Litre Vegetable Stock
Ground Black Pepper to taste
Pepitas, Fennel Seeds and Pomegranate Seeds to Garnish
Method
Peel and cut the carrots into small pieces.
Break a coconut in half and scoop out the white flesh. Cut half of the flesh into small pieces.
Carrots and Coconut are the only two ingredients in this creamy and sweet tasting soup.
Combine the chopped carrots and coconut into a saucepan and season with the black pepper, chilli and fennel seeds then add the vegetable stock.
Bring the soup to a boil then reduce heat to low and simmer for approximately 15 minutes or until the vegetables soften.
Combine all the soup ingredients together and bring to the boil then simmer until the vegetables soften.
Allow the soup to cool slightly then puree with a stick blender or food processor.
Reheat and serve as required. Garnish with a sprinkling of fennel seeds, pepitas and pomegranate seeds.
