Carrot and Pineapple Salad
Carrots are raw in this recipe and therefore healthier than cooking.
The ingredients go very well together and this is a salad that could accompany any meal, or even be eaten as a meal.
I am low suddenly in iron so have to go back to eating meat, and I ate this with a barbecued piece of sirloin steak, baked potato, onions and egg!
Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 4
Ingredients
2 - 3 carrots, grated
75 - 100 g sultanas
75 to 100 g walnuts, broken
175 g fetta, crumbled
1 440 g tin sliced pineapple, cut into pieces
French dressing - or Italian
Method
Mix the carrot, sultanas, and walnuts together.
Add the crumbled fetta.
Next add the sliced pineapple, and mix.
Just before serving, add the dressing and mix well.
Serve and it keeps well for a few days.
