Carrot and Zucchini Muffins
A great treat hot or cold.
Preparation Time: 12 minutes
Cooking Time: 20 minutes
Makes: 12 muffins
Ingredients
1 cup grated carrot
1 cup grated zucchini
1 cup grated cheese
2 cups SR flour
1/4 cup polenta
2 eggs
1 1/2 cups milk
3 tbsp olive oil
2 tbsp melted margarine (cooled)
Pinch of salt
Method
Pre heat oven to 180 degrees celsius.
Place self raising flour, polenta and salt in a bowl and stir to combine ingredients.
Make a well in the centre and add eggs, olive oil and melted margarine, then stir.
Gradually add the milk until batter is thick and smooth. The batter should thickly coat the back of a spoon but still pour off easily.
Add carrot, zucchini and cheese and combine well.
Fill a muffin tin and tap lightly on bench to remove air bubbles and even out the mixture.
Bake for approx 20 mins or until tops are golden brown.
