Carrot and Zucchini Muffins

A great treat hot or cold.

Preparation Time: 12 minutes
Cooking Time: 20 minutes
Makes: 12 muffins

Ingredients
1 cup grated carrot
1 cup grated zucchini
1 cup grated cheese
2 cups SR flour
1/4 cup polenta
2 eggs
1 1/2 cups milk
3 tbsp olive oil
2 tbsp melted margarine (cooled)
Pinch of salt

Method
  • Pre heat oven to 180 degrees celsius.
  • Place self raising flour, polenta and salt in a bowl and stir to combine ingredients.
  • Make a well in the centre and add eggs, olive oil and melted margarine, then stir.



  • Gradually add the milk until batter is thick and smooth. The batter should thickly coat the back of a spoon but still pour off easily.
  • Add carrot, zucchini and cheese and combine well.



  • Fill a muffin tin and tap lightly on bench to remove air bubbles and even out the mixture.
  • Bake for approx 20 mins or until tops are golden brown.
