Carrot Cake Smoothie

Cold and filling smoothies are the perfect go to meal on a hot day. Fill them with fruit and vegetables instead of icecream and syrups and you have a nutritious breakfast or lunch at your fingertips.



I am a carrot advocate, raw, cooked, juiced, baked in cakes and now blended into a smoothie. This was the first time I made this recipe and it is now my new favourite smoothie. It has all the flavours of carrot cake blitzed into a wonderfully chunky smoothie.

Preparation Time: 5 minutes

Makes: 1 servings

Ingredients
1 frozen banana
1 grated carrot
Splash of milk
2 tbs Greek yogurt
1 tbs desiccated coconut
1 tsp cinnamon
2 pecans
2 dates - soaked



Method
  • In a blender place the grated carrot, frozen banana, half the coconut, half the cinnamon, half the yogurt, the soaked then drained dates and a splash of milk.



  • Blend until smooth and pour into a glass.

  • Top with the remaining yogurt, sprinkle with cinnamon, coconut, and top with pecans.



  • Enjoy your delicious dessert style smoothie for breakfast, lunch or dessert!



  • Note: Bulk freeze peeled and chopped bananas for healthy ice cream at your fingertips all summer long.

    Keep a few dates soaking in the fridge for a natural sweetner to any smoothie.
