Carrot Coriander Quinoa Soup

This recipe takes the humble carrot soup and adds an impressive, albeit, not too extravagant twist.

With the addition of the quinoa, this soup becomes more of a meal, and packs a protein and fibre punch.



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
80g quinoa, dry
1 cup water
2 tbsp olive oil
1 brown onion, chopped
2 tbsp ginger, chopped
4 tsp garlic, chopped
1 tbsp ground coriander
1 kg carrots, peeled, chopped
6 cups vegetable stock

Method
  • In a small saucepan, heat the quinoa and water and bring to a boil. Reduce to a simmer and continue to cook until fluffly and the water has absorbed.
  • Meanwhile, heat the oil and cook onion until softened in a soup pot.

  • Mix through the ginger, garlic and ground coriander, then add the stock.

  • Microwave chopped carrots for 6 minutes on high or until soft. Transfer to the soup and heat through.

  • Move to a blender and puree until consistent and smooth. Return to the pot and add the quinoa. Heat until warm and ready to serve.
