Carrot French Fries

When you think of French Fries you think of potatoes, but there are many root vegetables out there that make fabulous crispy chips. I have used carrots in this recipe as they are colourful, delicious and one of my favourite veggies. But most root vegetables would work.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
800g carrots
Olive oil cooking spray
1 teaspoon sea salt
1 teaspoon favourite spices (I suggest dried herbs, sumac, smoked paprika or garam masala)

Method
  • Preheat your oven to 200C/180C fan-forced and lightly grease 2 large baking trays.

  • Wash and cut the carrots into 4mm thick sticks.
  • In a bowl place the salt and whatever spices//herbs you fancy, pour in the carrots and toss.
  • Place the carrot 'fries' in a single layer on the prepared trays and spray with oil.

  • Slide the trays into the hot oven and bake for 15 to 20 minutes, swapping trays halfway, until golden and tender.
  • Serve immediately with your favourite sauce.



  • If you are not so health conscious and want carrot fries RIGHT NOW you can shallow fry them in oil and season after they are cooked.
