Carrot French Fries
When you think of French Fries you think of potatoes, but there are many root vegetables out there that make fabulous crispy chips. I have used carrots in this recipe as they are colourful, delicious and one of my favourite veggies. But most root vegetables would work.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4
Ingredients
800g carrots
Olive oil cooking spray
1 teaspoon sea salt
1 teaspoon favourite spices (I suggest dried herbs, sumac, smoked paprika or garam masala)
Method
Preheat your oven to 200C/180C fan-forced and lightly grease 2 large baking trays.
Wash and cut the carrots into 4mm thick sticks.
In a bowl place the salt and whatever spices//herbs you fancy, pour in the carrots and toss.
Place the carrot 'fries' in a single layer on the prepared trays and spray with oil.
Slide the trays into the hot oven and bake for 15 to 20 minutes, swapping trays halfway, until golden and tender.
Serve immediately with your favourite sauce.
If you are not so health conscious and want carrot fries RIGHT NOW you can shallow fry them in oil and season after they are cooked.
