Carrot Fritters

Carrot fritters are lovely little golden parcels of deliciousness. They are easy to prepare and make a great lunch or snack.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4 -6

Ingredients
3 carrots, grated
1 potato, grated
1 cup plain flour
1/2 cup milk
1 egg, whisked
salt and pepper
oil for frying

Method
  • Combine the carrots, potato, flour, milk and egg in a bowl. Mix to combine then season with salt and pepper.

  • Heat oil to a medium high heat in either a frying pan or deep fryer. Place spoonfuls of mixture into the oil and cook for 3 minutes each side until golden and cooked through.

  • Repeat until all the mixture is used.
  • Drain the fritters on paper towel and serve with greek yoghurt.

  • You could add cumin, chilli or coriander to the mix to enhance the flavour.
