Carrot Kheer
is a healthy pudding which may be prepared in a short amount of time. It’s a dessert which tastes yummy as well, and would be loved by people of most age groups.

Preparation Time: 5 minutes
Cooking Time: 15-20 minutes
Makes: 5-6 servings
Ingredients
1 cup grated carrot (medium sized)
2 cup milk
1 tsp custard powder
1/2 tsp cardamon powder
1/2 cup dry fruits
1 tsp desiccated coconut
2 tsp ghee
Method
Heat 1 tsp of ghee in a pan and add the grated carrots to it. Allow it to cook for 5 minutes.

Pour some milk to the mixture and add a little cardamon powder and stir it continuously.

Now add custard powder and mix it till the milk becomes little thick in texture. Allow it to cook for 15- 20 minutes.

Garnish the kheer (pudding) with the dry fruits and desiccated coconut. You may now serve the dish either hot or let it cool down and relish it later.
