Carrot Nutburger with Coleslaw Salad

Posted 2019-04-25 by finyfollow

This is an unusual filling for a burger and is of course, vegetarian!

If you like nuts, then this is a burger for you! I used a mixture of all the nuts I had and this was about 6 different ones.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 2

Ingredients
½ onion, chopped
1 clove garlic, cruished
1 tbsp butter
About 12 g flour
65 g vegetable stock
1 cup mixed chopped nuts
25 g fresh breadcrumbs
1 carrot, peeled and coarsely grated
1 tbsp parsley, chopped
½ tsp thyme, dried
½ tbsp lemon juice
½ tsp vegetable extract
2 hamburger rolls

Method
  • Fry the onion and garlic in the butter until soft, but not coloured. Stir in the flour and cook for a minute or so.

  • Gradually add the stock and bring to the boil. Remove from the heat and stir in the nuts, breadcrumbs, thyme, lemon juice, seasoning and vegetable extract. Let stand until cold.

  • Add the carrots and parsley.

  • Divide the mixture into three and shape into round burgers and place on a greased baking sheet.

  • Cook in a moderate oven - about 180°/160° fan forced for about 25 minutes or until lightly browned and crisp.

  • Put whatever you wish on the rolls - I used gherkins and lettuce.

  • Serve hot or cold with salads.
