Carrot Nutburger with Coleslaw Salad
This is an unusual filling for a burger and is of course, vegetarian!
If you like nuts, then this is a burger for you! I used a mixture of all the nuts I had and this was about 6 different ones.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 2
Ingredients
½ onion, chopped
1 clove garlic, cruished
1 tbsp butter
About 12 g flour
65 g vegetable stock
1 cup mixed chopped nuts
25 g fresh breadcrumbs
1 carrot, peeled and coarsely grated
1 tbsp parsley, chopped
½ tsp thyme, dried
½ tbsp lemon juice
½ tsp vegetable extract
2 hamburger rolls
Method
Fry the onion and garlic in the butter until soft, but not coloured. Stir in the flour and cook for a minute or so.
Gradually add the stock and bring to the boil. Remove from the heat and stir in the nuts, breadcrumbs, thyme, lemon juice, seasoning and vegetable extract. Let stand until cold.
Add the carrots and parsley.
Divide the mixture into three and shape into round burgers and place on a greased baking sheet.
Cook in a moderate oven - about 180°/160° fan forced for about 25 minutes or until lightly browned and crisp.
Put whatever you wish on the rolls - I used gherkins and lettuce.
Serve hot or cold with salads.
