Carrot Paella

Trying to cut out the carbs, but missing your rice? Carrot paella might just be the answer.

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 3 servings

Ingredients
2 large carrots
1 yellow pepper
60g peas
150g chorizo
400g tinned tomatoes
1/4 tsp chilli flakes
1/2 tsp ground turmeric
1 tsp paprika
2 tsp ground parsley
2 tbsp lemon juice

Method



  • Using a spiraliser, spiralise the carrots.



  • Pulse the carrots in a food processor so that it looks like rice.

  • Chop onion, pepper, and chorizo, and mix with the carrot.



  • Stir in the remaining ingredients and simmer in a frying pan for ten minutes.
