Carrots can be a little boring. Here are three ways to brighten up your meal times with tips that make the everyday carrot more exciting.

Ingredients
10 Carrots
Olive Oil
Chilli powder
Half a Lemon
Thyme/Lemon Thyme
Black Pepper
Method
Roasted:
When cooking for my nieces my sister always asks that I try and get them to eat some vegetables. These (carrot) 'chips', as my niece calls them are a hit with little ones - and adults too.
Peel non-organic carrots and wash thoroughly.
Place the carrot batons in a saucepan of boiling water for 5 minutes.
Drain the carrots using a colander and place on a roasting tray. Drizzle with olive oil, lemon thyme and place in the oven for 25 minutes at 200 degrees.
Place the roasted carrots in a bowl and enjoy.
Raw:
Scrub the organic carrots and chop the ends off.
Slice into equally-sized batons, drizzle with oil, chilli and lemon juice.
Mashed:
Peel and chop the carrots.
Place in a saucepan of boiling water for 15 minutes.
Once soft drain 80% of the water, add a knob of butter, thyme and 'mash' using a mashing tool, or a fork.
Garnish with corriander for a professional finish.
Once carrots are turned into each dish, the bright colours, and different textures become more bearable, especially for fussy eaters.
