Cashew Chocolate GF Cookies
Soft banana, oozing chocolate and crunchy cashews are a match made in heaven. These spongy little beauties are Vegan and GF meaning a range of people can enjoy them. They are best eaten hot straight from the oven (like most cookies) with a coffee.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 12 cookies
Ingredients
2 ripe bananas
2 squares dark chocolate
3/4 cup raw cashews
3/4 rice flour
1 tbsp maple syrup
1 tsp vanilla essence
1 tsp baking powder
Pinch of salt
Method
Mash ripe bananas in a bowl. Chop the cashews and the chocolate and combine with the remaining ingredients.
Spoon onto a lined baking tray and flatten with a fork.
Bake in a moderate oven for 20 minutes or until the tops start to go golden.
The cookies don't go hard and crisp but stay light and moist because of the banana. Carefully slide a knife under each biscuit and eat hot!
Note: Use any nut, sweetener and chocolate you like!
