Instead of the usual tabbouleh and because I bought a new processor that I wanted to try, I decided to try a Tabbouleh salad with different ingredients.
Preparation Time: 10 minutes
Cooking Time: uncooked
Serves: 3 - 4 as a side
Ingredients 100 g cauliflower
100 g broccoli
2 - 3 tbsp mint leaves
3 tbsp parsley
About 20 g dried cranberries
20 g almonds, roughly chopped
Juice of one lemon
1½ tbsp olive oil
Salt and pepper, to taste
Put the broccoli florets in the bowl of your food processor, and pulse until it resembles small grains. Put them in a bowl.
Repeat with the cauliflower and add to the bowl.
Chop the parsley and mint roughly.
I always use one of these as this implement is quick and easy to use
Add all the remaining ingredients into the bowl, and mix very well.
