Cauliflower Mac and Cheese
I love cheese in baking and I like macaroni, and wanted something that was just a tad more healthy than just plain macaroni.
So I added cauliflower to this recipe and it was very tasty and had at least a vegetable in it!
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 6
Ingredients
2 cups cauliflower
225 g macaroni
4 tbsp butter
4 tbsp flour
1¼ cups milk
¾ cup cream
½ tsp salt -optional
Pepper
¼ tsp nutmeg
2 cups cheese, grated
For the crust
3 tbsp butter, melted
¾ cup breadcrumbs
¼ cup Parmesan cheese, grated
Method
Preheat the oven to 200°/180° fan forced.
For the crust
Combine the melted butter, breadcrumbs and Parmesan cheese in a bowl and set aside.
For the macaroni
Cook the cauliflower in water until almost tender, and then remove and cut into bite sized pieces when cool enough - do not throw out the water.
Return the water to the boil, and cook the pasta in the same water. Drain.
Melt the butter in a medium sauce pan.
Add the flour mixed with salt, nutmeg and pepper, and stir until well blended.
Slowly add the milk and cream, stirring continuously, until blended.
Simmer for about 2 minutes or until it thickens.
Remove from the heat and add the cheese, stirring until it is melted.
Combine the pasta, cauliflower and cheese sauce and transfer into a buttered casserole dish.
Top with the breadcrumb mixture, and some extra cheese - optional.
Bake for about 20 minutes or until the breadcrumbs for a crispy crust - serve.
