Cauliflower Mac and Cheese
I recently dined at a posh waterfront restaurant,
Sails on Lavender Bay and I was quite taken by this dish. I decided to create my own healthy version of it and I must say the result was quite spectacular.
Cauliflower is such a good vegetable and it is in season now. I added a load of cauliflower into this dish along with macaroni, cheese and truffle oil.
This would make a great family dinner in the cooler month. Plus it is very cheap and easy to make!
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6 servings
Ingredients
200g macaroni pasta
1 whole cauliflower
50g leg ham (optional)
250g
white sauce
100g
aged cheddar cheese
10g
Italian grana padano cheese
10g fresh parsley
3 tablespoons
truffle olive oil
Salt and pepper to season
Method
Break cauliflower into florets and cooked them in salted boiling water for 5 minutes. Drain and set aside to cool.
Preheat oven to 180°C.
Cook the macaroni to packet directions and drain.
Arrange macaroni flatly on a oven-proof dish.
Place a layer of shredded cauliflower on top of the macaroni.
Drizzle some truffle olive oil on top of the macaroni and the cauliflower.
Mix the white sauce with the macaroni. Season with salt and pepper.
Top with aged cheddar cheese slices.
Bake for 25 minutes or until golden.
Top with ham pieces (optional).
Drizzle lightly with more truffle olive oil.
Serve in slices with shaved Italian grana padano cheese and fresh parsley.
This is just a delicious budget friendly main meal that is good enough to be served at a fine-dining restaurant.
