Cauliflower Rice

Cauliflower Rice

This recipe is for rice lovers, who are restricted to eating rice due to health conditions or for a strict diet

Preparation Time: 20 minutes
Cooking Time: 10-15 minutes
Makes: 2

Ingredients
1 whole cauliflower
2 table spoon of cooking oil
1/2 onion sliced
2-3 cloves of minced garlic
1 teaspoon of minced ginger
1 and 1/2 cups of frozen mixed vegetable
1 or 2 eggs bitten (optional)
1 tablespoon of soy sauce
salt to taste
Bunch of chopped spring onion
Bunch of chopped cilantro or coriander

Method
  • Wash the cauliflower, cut off the stems and then cut the cauliflower into chunks.
  • Place the cauliflower chunks into a food processor and process until rice like consistency. Be careful not to puree your cauliflower.

  • Processed rice like consistency cauliflower.


  • Heat oil in a skillet pan.
  • Add sliced onions, minced garlic and ginger once the oil is heated.Saute the onions, ginger and garlic until the onions becomes translucent.
  • Thaw frozen mixed vegetables before cooking. Add frozen vegetables and saute for another 5 minutes.



  • Add processed cauliflower, soy sauce and salt.

  • Cauliflower added


  • Mix everything well and cover it for few minutes.
  • Once everything is cooked sprinkle chopped coriander and spring onions.
  • This is optional but, to serve poach eggs and place it on the cauliflower.
