This spread is so creamy and delicious, you will totally love it. It's perfect on toast, with breadsticks or chips.
Preparation Time: 5 minutes plus 1 hour standing time

Makes: 3 servings
Ingredients
1 head of cauliflower
Homemade vegan mayonnaise
Salt and pepper
1 small onion, chopped or grated
Method
Cut the cauliflower into florets and wash it. Add it into a pot, add 1/2 teaspoon of salt and cover with water. Cook until the cauliflower is tender. You can also steam the cauliflower, instead of cooking it in water.
Put the cauliflower florets in a sifter, mash them with a fork and let them stand for 1 hour to get rid of the excess water. This step is very important. because this way, the spread will become fluffy, not runny.
After 1 hour, move the spread into a bowl, add the grated onion, season it with salt and pepper and add mayonnaise, as much as you need. Stir everything and serve with toast or bread sticks.
5-minute Vegan Mayonnaise
Ingredients
50 ml of unsweetened soy milk
100 ml of grape seed or sunflower oil
Salt and pepper
Juice of half a lemon
1 teaspoon of mustard (optional)
Blend the milk and oil with the vertical blender without lifting it for 2 minutes, then add juice from 1/2 a lemon, season with salt and pepper.
Blend for 3 more minutes until it becomes a thick paste. Add mustard if you want and stir.
Note: You can make as much or as little mayonnaise you want, but keep the ratio 2:1 for a thick mayonnaise.
