These are an easy accompaniment to a meal, and are very tasty - celery goes with just about everything and if you do not like blue cheese, you could replace with a Camembert, or even plain grated cheese, though the blue cheese tends to give it a bit of "kick".
Preparation Time: 15 minutes plus 20 minutes standing

Serves: About 12 pieces
Ingredients
2 stalks celery
1 tbsp sultanas
1 tsp dry sherry
90 g cottage cheese, sieved
30 g blue cheese, crumbled
1 gherkin or cornichon
½ tbsp chives, optional
Method
Wash and dry the celery, and cut off the very wide bottom part.
Cut into about 5 cm lengths and put in iced water for 15 minutes.
Combine the sultanas and sherry and leave for about 15 minutes.
Mix the cheeses, gherkins and the chives.
Drain the sultana mixture if necessary and stir these into the cheese mixture.
Spoon the cheese mixture into the hollow of the celery pieces.
Chill until you are ready to serve.
Great as a snack, or an accompaniment and even good to take on a picnic.
I served them with my bread baskets with curried, mayonnaise mushrooms.
