Century Egg and Salted Egg Stir Fry

I am intrigued by these two exotic eggs - century egg and salted duck egg. They have been widely used in Asian cooking and are as common as chicken eggs.



Century egg is the black egg with a jelly-like texture. The salted duck egg looks like a normal egg, but salty in taste.

This is a a simple and delicious plate of stir-fried exotic eggs with garlic chives.


Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings



Ingredients
1 century egg
1 salted duck egg
1 bunch garlic chive
50g sweet potato flour
1 tablespoon cooking oil
1 teaspoon salt

Method
  • Crack and gently peel the century egg & salted duck egg from the shells



  • Cut the eggs into quarters. Then into halves.



  • Lightly dust the century egg in sweet potato flour.



  • Heat the oil in a pan, and shallow pan fry the egg until you get a crispy coating.



  • Sautee the garlic chives in the remaining oil for 3 minutes .
  • Season with salt.
  • Add the salted duck egg pieces into the pan and quick stir-fry for 1 minute.
  • Add the century eggs back into the pan and stir-fry for further 1 minute.
  • Remove and serve immediately.



  • If you order this dish at a fine Asian restaurant, they actually give this dish a beautifully name "Forever abundance in gold and silver". [To take symbolism from salted duck egg (gold), the century egg (silver) and garlic chive which has the embedded meaning of forever.]

    It is a simple dish to cook but the taste and the name is very pleasing.
