Char Sui Chicken And Vegetable Stir Fry With Noodles

Stir fry is a regular at my dinner table, due to the ease in which it can be prepared. The flavours can vary enormously.

Here I've gone for a super simple flavour base, by using a few prepared sauces and some ginger and garlic.

Alternatives can be to add Hoisin sauce, or a peanut satay sauce.

Preparation Time: 15 minutes
Cooking Time: 15 - 18 minutes
Makes: 4 servings


Ingredients
600 gm Chicken thigh fillets
1 carrot
1/2 capsicum
3 spring onions
1 bunch broccolini
2 garlic cloves
2 tsp grated ginger
100g Char Sui sauce
1 1/2 tbsp. premium soy sauce
400g Hokkien noodles


Method
  • Slice the vegetables and chicken thighs.


  • Place 3 tbsp. vegetable oil into a wok and place on high heat. When the oil is hot, add the garlic, ginger, and spring onion and fry quickly.
  • Add chicken thighs and continue to cook over a high heat, stirring constantly.
  • When the chicken is sealed, add the carrots and capsicum, toss together, then add the sauces.
  • Meanwhile prepare the noodles as per directions (usually place them in a bowl and cover with boiling water)


  • A few minutes from the vegetables being cooked, add the broccolini.
  • Add the prepared noodles and toss through the sauce.
