Making normal bread is labour intensive, and with all the kneading and rising, many people don't have time for it. Which is a shame, because there are few things as wonderful as a warm, fresh, home baked loaf of bread. The wonder of this bread is that you don't have to knead, prove, or worry that it won't rise. This is cheat's bread!

Loaf cooling
Preparation Time: 10 minutes
Cooking Time: 35-40 minutes
Makes: 10 or more servings
Ingredients
Bread
3 cups self raising flour
1 cup polenta
1.5 cups corn
4 eggs
2 cups milk
fresh herbs
3 tbsp olive oil
2 tbsp brown sugar
salt and pepper

Ingredients ready to mix
Herb and Garlic Butter
125g butter
3 - 6 garlic cloves
fresh herbs
Method
Bread
Preheat oven to 190C (180C for fan forced)
Add all bread ingredients to a large mixing bowl, mix until well combined
Line a loaf tin with baking paper and spread bread mix evenly in it.
Bake for 30 - 40 minutes until it sounds hollow when tapped
Place on a drying rack and allow to cool for at least half an hour before slicing
Butter
Chop herbs and garlic finely and mix with room temperature butter
When the bread has cooled, slice and spread garlic and herb butter on it.
This bread goes particularly well with soups and stews, and although the flavour is different to a traditional bread, with the garlic butter you won't mind that in the slightest!

Ready to eat!
