Cheats Spinach and Fetta Pita
In the mood for pita, but couldn’t be bothered wrestling with the dough? With this recipe, you don’t have to. Using filo pastry as a substitute for the homemade variation required of traditional pita recipes, you can create a meal that’s just as yummy as the original and in less than half the time. Happy eating.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 4 big or 8 small servings
Ingredients
250g fresh spinach
250g cottage cheese
200g feta, crumbled
20g mozzarella, grated
4 eggs
1 tablespoon ground nutmeg
16 sheets filo pastry
80g butter, melted
Method
Preheat oven to 180° (fan-forced).
Grease a baking tray and line with baking paper.
Roughly chop spinach.
**The easiest way to chop spinach is to first cut the leaves away from the stalk. Next, stack the leaves one on top of the other and roll them as you would a pancake. Cut the roll down the middle lengthways and slice away. Chop stalks as you normally would.
Using fingers, combine spinach, eggs, cottage cheese, feta, mozzarella and ground nutmeg.
Season with salt and white ground pepper.
Take 4 sheets of pastry and spoon spinach mixture evenly as per image.
Using butter, brush edges of pastry before enclosing the filling.
Repeat steps 3 and 4 three times so that you end up with four pitas.
Brush pita with melted butter and bake for 30 minutes or until pastry is golden.
Serve with salad and enjoy.
