Cheats Yorkshire Curd Tart
Originating from Yorkshire, this tart is traditionally made from the fresh curd from milk. It is, however, very difficult to buy from the shops these days, and although you can make your own, I find using cream cheese as a substitute a good cheat that saves the hassle.
Curd tart is essentially a baked cheesecake in pastry, and this version has a lovely light texture like that of lemon mousse.
Preparation Time: 50 minutes
Cooking Time: 35 minutes
Makes: 6 servings
Ingredients
150g plain white flour
2 tbsp icing sugar
100g margarine
5 eggs
1 lemon
1 tbsp Truvia sweetener (or 50g caster sugar)
225g cream cheese
1 tsp rose water
50g raisins
½ tsp ground nutmeg
Method
Zest and juice the lemon.
Beat together the flour, icing sugar, and 75g margin to form the consistency of breadcrumbs.
Separate one egg and beat in the yolk with the lemon juice to form pastry.
Chill the pastry in the fridge for at least ten minutes.
Roll out the pastry, place it in a tart tin and blind bake for 15 minutes.
Lower the temperature to to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
Beat the sweetener/sugar with the cream cheese.
Separate two eggs and beat in the yolks with two whole eggs.
Melt 25g margarine and stir into the mixture along with lemon zest, rose water, and raisins.
Pour the mixture into the pastry case and sprinkle over the nutmeg.
Bake for 20 minutes.
