Best served as starter or afternoon snack, these savoury balls will melt in your mouth as soon as you pop them in.

2 cups self raising flour
2 eggs
2 tbsp butter
2 cups water
2 cups grated cheddar cheese
1 onion diced thinly
a few branches of thyme

Method
Place water, butter, diced onion and thyme in a saucepan.

Gradually, add flour, taking care not to allow formation of lumps. Mix well until dough leaves sides of pan.

When cooled down, firstly add one egg, mix thoroughly before adding the second one. Again, mix well until all eggs have been absorbed in.

Form small balls with your hands. To prevent your fingers from getting sticky, take a little dough, roll it in breadcrumbs and then, form smooth little balls with the palm of your hand.
Deep fry in hot oil until golden in colour. Leave to drain on kitchen paper before serving.
