Cheese Bacon Loaf
We all know that bread and bacon go well together - there's something very satisfying about a bacon sarnie. A few streaks of bacon in between two slices of bread can set you up for the day. Here, you can have your sarnie all in one with a delicious cheese and bacon loaf. It is a quick bread, so no yeast and no proving, means you don't have to wait too long for fabulous results. Based on the brands I used, an average sized slice is 75 calories.

Makes: 1 loaf
Ingredients
100g unsmoked streaky bacon
50g soya butter
100g plain flour
100g wholemeal bread flour
1 tsp bicarbonate of soda
75g cheddar cheese
1 large egg
150ml light soya milk
Method
Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
Mix the flours and bicarbonate of soda together.
Rub in the butter so that is is the consistency of bread crumbs.
Fry the bacon, chop it up, then mix in.
Grate the cheese and mix 65g into the mixture.
Beat in the egg and 135ml of milk.
Knead the dough for about ten minutes, then shape into a loaf.
Brush the top with the remaining milk and sprinkle over the remaining cheese.
Make slices across the top of the loaf, then bake in the oven.
