A lovely egg and bacon boat, perfect for a light dinner or lunch. Serve cold for an easy lunch or picnic. A lighter and healthier option to pastry quiche. These tortillas can also be purchased in wholemeal, for extra nutritional value.
Preparation Time: 5 minutes
Cooking Time: 20-25 minutes
Serves: 5-6
Ingredients
250g of diced ham or bacon
8 eggs, I allow one per “boat”
3/4 cup of cream
8 soft tortilla shells, stand and stuff variety
1 cup of tasty grated cheese
1 onion - grated
salt & pepper
Method
Preheat oven to 180 fan forced.
Place soft tortillas onto non-stick baking trays.
Fry off diced bacon to a lovely golden brown. Cool slightly.
Sprinkle bacon, onion and cheese into boats.
In a bowl lightly whisk together the eggs, cream, salt and pepper.
Pour this mixture into taco shells. Do not overfill as mixture will rise.
Bake for 20-25 minutes or until a lovely golden brown.
Serve with your favourite salad.
