Cheese and Bacon Chowder
This brilliant soup is perfect for using up leftover mashed potato. Thick and satisfying for the coldest winter day.
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 3
Ingredients
125 g bacon, diced
1 tbsp olive oil
1 onion, finely diced
1 tsp of minced garlic
2 cups of chicken stock
2 cups of mashed potato (500 g)
½ cup of tasted grated cheese
2 tbsp thickened cream
pepper & salt
Method
In a large soup pan, add olive oil and bacon. Fry till golden. Remove and set aside.
Add onion and garlic and cook until softened. Bacon fat in pan will brown and this adds flavour.
Add stock and mashed potato and whisk while bringing to the boil.
When soup is smooth, lower the heat and add grated cheese and season well. Stir until cheese has melted.
Add ¾ of the bacon and thickened cream, stir well.
Garnish with reserved bacon or a little extra thickened cream.
Serve with a crusty roll.
