Cheese and Bacon Chowder

This brilliant soup is perfect for using up leftover mashed potato. Thick and satisfying for the coldest winter day.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 3

Ingredients
125 g bacon, diced
1 tbsp olive oil
1 onion, finely diced
1 tsp of minced garlic
2 cups of chicken stock
2 cups of mashed potato (500 g)
½ cup of tasted grated cheese
2 tbsp thickened cream
pepper & salt

Method
  • In a large soup pan, add olive oil and bacon. Fry till golden. Remove and set aside.
  • Add onion and garlic and cook until softened. Bacon fat in pan will brown and this adds flavour.

  • Add stock and mashed potato and whisk while bringing to the boil.

  • When soup is smooth, lower the heat and add grated cheese and season well. Stir until cheese has melted.

  • Add ¾ of the bacon and thickened cream, stir well.
  • Garnish with reserved bacon or a little extra thickened cream.
  • Serve with a crusty roll.
