Cheese And Spring Onion Potato Skins
These make a very satisfying and tasty side dish or a whole one would make a lovely supper.
Preparation Time: 15 minutes
Cooking Time: 2 hours
Makes: 8 servings
Ingredients
Handful of sea salt
4 large baking potatoes
200g strong hard cheese (e.g. Cheddar)
2 tbsp sour cream
3 spring onions
1 tbsp Worcestershire sauce
Method
Preheat the oven to 180 Celsius
Wash the potatoes and rub them with sea salt.
Bake the potatoes for around 90 minutes, or until fully cooked through.
Take the potatoes out of the oven and as soon as they are cool enough to handle, cut them in half.
Scoop out the flesh and put in a large mixing bowl.
Set aside the husks and cover until you need them.
Grate the cheese and add 180g to the potato and mix it.
Add the sour cream and the Worcestershire sauce and mix it all together.
Finely chop the spring onions and then add them to the potato.
Spoon the potato into the potato skins.
Sprinkle the remainder of the grated cheese over the skins.
Put the skins back into the oven for 20-30 minutes until the cheese is golden.
