Cheese, Veggie 'n' Corn Dumplings

Cheese Veggie 'n' Corn Dumplings are a great snacking dish that are nutritious as they contains a lot of vegetables. The addition of cheese makes the whole dish very yummy. This starter is crunchy, healthy and tasty and is recommendable for people of all ages.

Preparation Time: 20 minutes
Cooking Time: 25-30 minutes
Makes: 8 - 10 servings

1 cup corn
1 cup grated carrot
1 finely chopped capsicum (medium sized)
1 cup bread crumbs
Finely chopped coriander
Cheese of your choice
1/2 tsp mixed herbs
1/2 tsp pepper powder
2 boiled potatoes
1 cup corn starch
Oil for deep frying


Preparation of Stuffing

Add corn, capsicum, grated carrot, coriander, cheese, bread crumbs and mixed herbs in a bowl. Mix the ingredients well.

The Bread crumbs help to bind the mixture properly and give a good flavour.

Roll into small balls and keep them aside.

Preparation of covering for the dumplings

Mash the boiled potatoes and mix with corn starch to make the dough a little smooth.

Preparation of dumplings

Flatten each ball with your finger tip and stuff the veggie corn cheese mixture into it. Seal the edges to make it look like a ball again.

Deep fry the balls, till they are golden brown in colour and serve hot with tomato sauce.
