Cheesy Chicken Vegetable Rissoles
Easy chicken & vegetable bites for a simple light lunch or snack for the kids after school.

Makes: 4 servings
Ingredients
200g chicken mince
1 cup frozen mixed vegetables (carrots, peas, sweetcorn), defrosted
1/4 cup tasty cheese, roughly chopped
sweet chilli sauce and coleslaw, to serve
Method
Preheat the oven to 160C fan-forced.
Combine the chicken mince, mixed vegetables and cheese in a bowl. Mix with hands until combined.
Roll into 16 rissoles.
Heat oil in a frying pan, cook the rissoles for 2 minutes each side, until browned.
Transfer to a baking tray lined with baking paper. Bake in the preheated oven for 15 minutes or until cooked through.
Serve with sweet chilli sauce and coleslaw.
