Cheesy Potato Bake with Bacon

This dish is a must have at a BBQ, it's delicious and creamy and goes perfectly with sausages, chicken, beef and lamb.

Preparation Time: 15 minutes
Cooking Time: 45-60 minutes
Serves: 8

Ingredients
1 kg potatoes, peeled and sliced
1 onion, diced
150 g bacon, diced
400 ml thickened cream
200 g grated cheese
Salt and pepper to taste

Method

Preheat oven to 180C.

Have all your ingredients prepared and easily accessible.

In a large baking dish, place slices of potato in the base of the dish to form a single layer. Sprinkle with some onion, bacon, cheese and a small amount of salt and pepper.

Repeat the layers in the baking dish until all the potato is gone, making sure you leave approx 100 g of cheese for the top layer.

After you've sprinkled the cheese on the last layer, pour approx 400 ml of cream evenly over the top.

Bake in oven for 45 minutes or until the potato is cooked and the top is golden brown.

Serve hot with meat and/or salad.

You can easily modify this recipe by including some crushed garlic and/or doing a layer of potato followed by a layer of pumpkin or sweet potato and carrot.
