Cherry and Apricot Scones

If you ever want to jazz up a traditional [Link http://recipeyum.com.au/shortbread-biscuits/93/ plain scone] then just add some fruit to the mix. I was originally going to make cherry scones, but ran out of cherries, so threw some apricots in there too. As this recipe does not use eggs and is dairy free, it makes them suitable for vegans too. Based on the ingredients I used, each scone should be about 193 calories

Preparation Time: 25 minutes
Cooking Time: 30 minutes
Makes: 7 servings

Ingredients
225g wholemeal flour
50g soya butter
60g glace cherries
50g dried apricots
1 tsp baking powder
1 tbsp Xylitol sweetener (or caster sugar if you prefer)
150ml light soya milk


Method
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Mix the flour and baking powder together.





  • Rub the butter and flour together for a breadcrumb like consistency.





  • Chop the cherries and apricots and mix in (the cherries work best in halves, and the apricots in smaller pieces).
  • Gradually pour in the milk to form a dough.



  • Divide the dough into rounds and bake.
