Cherry and Brandy Bread

Somewhere between bread and a sponge cake, this cherry and brandy bread is sweet, light, and moist.



Preparation Time: 2 hours 30 minutes
Cooking Time: 45 minutes
Serves: 1 Loaf

Ingredients
500g strong white bread flour
300g brandy sauce
100g glacé cherries
7g fast action yeast
½ tsp salt
150ml tepid water
2 eggs
Rapeseed oil (for greasing)

Method
  • Roughly chop the cherries.

  • Mix together the flour, yeast, salt, and brandy sauce, and then add the eggs one at a time, mixing in each individually.
  • Gradually add the water, mixing as you go along, to make a sticky dough.

  • Knead the dough for ten minutes and then prove for two hours in a greased bowl.

  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/ 400 & #3872 ;F/ 6 Gas.
  • Grease a 1litre loaf tin and then transfer the dough.
  • Bake for 45 minutes.
