Cherry and White Chocolate Cake

This is an easy cake to make and an even easier one to eat. Rich and luscious it's great for afternoon tea or as a dessert.

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 6-8 servings



Ingredients
1 cup white chocolate bits (you can buy the bits or make your own by chopping up small bars of white chocolate)
1 cup cherries (fresh, frozen or bottled - just take the pips out if using fresh ones or drain the liquid off if using bottled or canned cherries)
1 cup caster sugar
300ml cream
1 & 3/4 cups self raising flour
2 eggs
1 teaspoon vanilla

Method
  • Preheat your oven to 180 degrees.
  • Grease a 20cm baking tin and line with greaseproof paper.
  • Beat the eggs and sugar together in a bowl until slightly thickened.



  • Add cream and vanilla, mix in well.
  • Gently fold in the flour until the mixture is smooth.



  • Add cherries and chocolate bits and stir gently to distribute them through the mixture.



  • Place in the prepared tin and cook for 45mins to an hour. Test with a skewer - if it comes out clean the cake is done.
  • Allow to cool in the tin.
  • Turn cake out and decorate with icing sugar, icing or whipped cream.
