Cherry Cheesecake

A light textured ad subtly flavoured cheesecake that would make a great dessert after a heavy meal.

Preparation Time: 25 minutes
Cooking Time: 40 minutes
Makes: 8 servings

Ingredients
225g frozen cherries
140g digestive biscuits
40g ginger nut biscuits
90g margarine
450g light cream cheese
20g Truvia sweetener (or 75g caster sugar)
3 tbsp water
1 tsp vanilla extract
2 eggs

Method



  • Heat the cherries in a saucepan with the water, and stir until it thickens into a compote.



  • Blend the digestives and ginger nuts in a food processor.



  • Rub in the margarine and then press the biscuit dough down into the bottom of a cake tin, and then chill it in the fridge.



  • Separate the eggs and beat the yolks with sweetener/sugar and vanilla extract.



  • Stir the cherry compote into the cream cheese, and then beat in the yolks.



  • Pour the mixture onto of the biscuit base and bake in an oven pre-heated to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
