Cherry Choc Pie

Cherries are my favourite filling for a fruit pie, when adding my favourite treat of chocolate, it makes a deliciously indulgent dessert. Based on the ingredients I used, each slice is about 324 calories.

Preparation Time: 1 hour 5 minutes
Cooking Time: 45 minutes
Makes: 8 servings

Ingredients
250g wholemeal flour
125g margarine
55g light margarine
7 tbsp water
½ tbsp almond milk
1 tbsp cocoa powder
80g white chocolate
550g frozen cherries (pitted)
150g cherry jam


Method



  • Rub 125g margarine with flour and cocoa powder for a breadcrumb like consistency.
  • Add five tablespoons water to form a dough, and then put it in the fridge to chill.



  • Heat the cherries, jam, 55g light margarine, and two tablespoons water in a saucepan until it starts to bubble, then allow it to simmer for five minutes until thick.



  • Take the cherry mixture off the heat, and stir in 75g white chocolate.
  • Pre-heat oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.



  • Take the pastry dough out of the fridge and divide in half.



  • Roll out one half and turn it into the base of a pie dish.



  • Pour the cherry filling into the dish, and drain any excess juice.
  • Roll out the second half of the pastry, and cover the cherries with it.



  • Brush the top with milk, then make to slices through the pastry.
  • Bake in the oven for thirty minutes.



  • Grate 5g white chocolate over the top of the pie.



  • Bake in the often for ten minutes at 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.
