if you want something sweet but light then a meringue is a good choice. I much prefer soft meringue to the hard chewy version, and it is a treat when it soaks up all the fruit juices.

Makes: 2 servings
Ingredients
200g frozen cherries
4 eggs
2 tbsp Truvia sweetener (or 100g caster sugar)
3 tbsp water
1tsp icing sugar.
Method
Pre-heat the oven to 150༠C/130 ༠C fan/250 ༠F/ ½ Gas.
Separate the eggs and whisk them to soft peaks.
Add the sweetener/sugar and continue whisking until it reaches stiff peaks.
Put the meringue in a piping bag and pipe a swirling circle that rises into a small pyramid.
Heat the cherries in a saucepan with the water and stir occasionally until it turns into a thick compote.
Pour the compote on top of the meringue and sprinkle with icing sugar.
