Cherry Meringue

if you want something sweet but light then a meringue is a good choice. I much prefer soft meringue to the hard chewy version, and it is a treat when it soaks up all the fruit juices.

Preparation Time: 20 minutes
Cooking Time: 50 minutes
Makes: 2 servings

Ingredients
200g frozen cherries
4 eggs
2 tbsp Truvia sweetener (or 100g caster sugar)
3 tbsp water
1tsp icing sugar.

Method
  • Pre-heat the oven to 150& #3872 ;C/130 & #3872 ;C fan/250 & #3872 ;F/ ½ Gas.



  • Separate the eggs and whisk them to soft peaks.
  • Add the sweetener/sugar and continue whisking until it reaches stiff peaks.



  • Put the meringue in a piping bag and pipe a swirling circle that rises into a small pyramid.



  • Bake in the oven.



  • Heat the cherries in a saucepan with the water and stir occasionally until it turns into a thick compote.



  • Pour the compote on top of the meringue and sprinkle with icing sugar.
