Cherry Peanut Overnight Oats

For those of us who enjoy a no-hassle breakfast, this one is for you!

These overnight oats are deceptively easy to make, but pack a flavoursome punch with the cherry and peanut combination - a perfect mix of sweet and salty.

We prefer to use coconut or almond yoghurt for the base, but a dairy yoghurt also works fine. Just be sure to choose a relatively thin and runny product as the oats will absorb a lot of moisture overnight.



Preparation Time: 5 minutes (plus overnight soak)
Serves: 1

Ingredients
1/2 cup frozen pitted cherries
1/3 cup oats
1/4 teaspoon ground cinnamon
3/4 cup coconut or almond yoghurt
2 tablespoons roasted peanuts

Method
  • Place frozen cherries in a bowl.



  • Top with the oats and ground cinnamon.



  • Add the yoghurt and peanuts and stir until well mixed through. Cover and refrigerate overnight, ready to be enjoyed first thing in the morning!
