Chewy Choc Chip Cookies

This is one of my favourite Choc Chip cookie recipes; luckily it's easy to double the mixture. Using cornflour in helps keep these cookies moist.



Preparation Time: 20 minutes
Cooking Time: 13 minutes
Makes: 24 Cookies

Ingredients
2 cups flour minus 4 Tbls
4 Tbsp cornflour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 Tbls vanilla extract
1 egg
1 egg yolk
2 cups choc chips


Method
Preheat oven to 165 degrees. Line cookie tray with baking paper.

Sift together flour, cornflour, baking soda and salt
In another bowl, cream melted butter and sugars until blended. Beat in vanilla, egg and egg yolk until light and creamy.

It will be quite runny, don't worry!


Fold in flours and chocolate chips until just combined.

Be nice and gentle - there might be some residue flour


Roll tablespoons of mixture and place on cookie sheets. Place these in the fridge for 10 minutes or so to prevent them spreading out too much.

- give them a little bit of breathing room


Bake for 11-14 minutes until just golden - don't overbake or they will be dry. Cool on cookie tray until they can be lifted. Enjoy with a good cup of tea.
