Chewy Choc Chip Cookies

This is one of my favourite Choc Chip cookie recipes; luckily it's easy to double the mixture. Using cornflour in helps keep these cookies moist.



Preparation Time: 20 minutes
Cooking Time: 13 minutes
Makes: 24 Cookies

Ingredients
2 cups flour minus 4 Tbls
4 Tbsp cornflour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 Tbls vanilla extract
1 egg
1 egg yolk
2 cups choc chips


Method
  • Preheat oven to 165 degrees. Line cookie tray with baking paper.

  • Sift together flour, cornflour, baking soda and salt
  • In another bowl, cream melted butter and sugars until blended. Beat in vanilla, egg and egg yolk until light and creamy.

  • It will be quite runny, dont worry


  • Fold in flours and chocolate chips until just combined.

  • Be nice and gentle there might be some residue flour


  • Roll tablespoons of mixture and place on cookie sheets. Place these in the fridge for 10 minutes or so to prevent them spreading out too much.

  • give them a little bit of breathing room


  • Bake for 11-14 minutes until just golden - don't overbake or they will be dry. Cool on cookie tray until they can be lifted. Enjoy with a good cup of tea.
