Anything with peanut butter makes my heart sing, and I mean warble out a song that will make you weep. So here's a recipe that is both joy and fantasy mixed together: chewy (yes CHEWY!), peanut butter cookies
Preparation Time: 40 minutes
Cooking Time: 16-18 minutes
Makes: 20-22 servings
Ingredients
40g Peanuts
40g Peanut butter
225g unsalted butter, at room temperature
200g caster sugar
200g light brown sugar
200g smooth peanut butter
300g Plain flour
2 Eggs
1tsp of baking powder
1tsp of bicarbonate of soda
Method
Line two baking trays with baking paper and sift the flour, baking powder and bicarb of soda in a bowl.
Cream the butter and sugars using an electric mixer/food processor and add the eggs, one at a time. Once combined beat in the peanut butter (by hand) until combined.
Add the flour mix to the bowl until just combined. Fold in the crushed and whole peanuts.
Pop the dough in the fridge for 30 minutes
Preheat the oven to 180 degrees (gas mark 4) and start to divide the dough into balls using an ice cream scoop.
If you don't have an ice cream scoop a spoon/your hands will do. Put 6 scoops on each baking tray and bake for 16-18 minutes (if they're browning lightly at the edges after 16 minutes they're done)
After the stated time remove from the oven and your babies should be done. Leave to cool on wire wracks (or a metal grill will do).
Once cooled somewhat - slightly warm, still a little gooey cookies are the best - they are ready to eat! Peanut butter cookies are the perfect treat; sweet, 1 may satisfy a small child, but for adults they're terribly moreish so make enough to last a few days.
Keep them in the biscuit tin/in a closed airtight containers. Do not refrigerate, they will go hard and will become too crunchy to be enjoyed. Happy baking.
